Each learner must be able to clean and handle glassware in an efficient, hygienic and organised manner.
The learner must understand the importance of preparing the glassware and cleaning area within the specified time frames.

Specific Outcomes and Assessment Criteria: 

SPECIFIC OUTCOME 1 
Identify and use glassware in accordance with organisational requirements, in such a manner that customer satisfaction is ensured. 

ASSESSMENT CRITERIA
 

ASSESSMENT CRITERION 1 
The correlation between completing preparation duties within time limits and customer satisfaction is described. 

ASSESSMENT CRITERION 2 
Glassware items are located and identified in accordance with its usage and organisational procedures for handling, cleaning and storing them explained. 
ASSESSMENT CRITERION RANGE 
The range of glassware is: Beer glasses, wine glasses, liqueur glasses, sherry glasses, cocktail glasses, highball glasses and whiskey glasses.
 

ASSESSMENT CRITERION 3 
Glassware is carried in a convenient, organised and safe manner. 

SPECIFIC OUTCOME 2 
Clean glassware and dispose the waste and dirty water thereof in accordance with organisational requirements.

The importance of not disposing cracked and broken glassware according to organisational requirements is described. 

ASSESSMENT CRITERION 2 
The importance of preparing and maintaining storage areas for glasses according to organisational requirements and procedures is explained. 

ASSESSMENT CRITERION 3 
Glassware is cleaned and stored according to organisational requirements in hygienic cleaning and storage areas. 

ASSESSMENT CRITERION 4 
Equipment or machinery together with cleaning chemicals is correctly used according to organisational requirements to clean glassware. 
ASSESSMENT CRITERION RANGE 
Range of cleaning equipment: Automatic dishwashers, sinks, brushes and cloths.
 

ASSESSMENT CRITERION 5 
Dirty water is disposed of in a hygienic way and the importance thereof described. 

ASSESSMENT CRITERION 6 
Problems associated with cleaning and storing of glassware is listed and reasons for decisions to solve this are described. 
ASSESSMENT CRITERION RANGE 
The range of unexpected situations is: Breakages, shortage of cleaning chemicals, faulty or broken cleaning equipment, and accidents.
 


UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
1. Anyone assessing a learner against this unit standard must be registered as an assessor with the relevant ETQA.

2. Any institution offering learning that will enable achievement of this unit standard must be registered with the FE/HE Registrar.

3. Any institution wishing to receive skill development grants must be accredited with the relevant ETQA. Such an institution will also be registered with the relevant SETA.

4. Moderation of assessment will be done by the relevant ETQA at its discretion.

We therefore structured outcomes using the format noun + verb + condition (modifying phrase)Specific outcomes have been split into three categoriesa) knowledge and understanding (what the learner must know and understand)b) decision-making and acting (what the learner must do)c) adapting performance ( including reflexive competence)In many instances there are more than six specific outcomes, as the inclusion of critical cross-field outcomes and embedded knowledge has increased the number of specific outcomes.
