Specific Outcomes and Assessment Criteria: 

SPECIFIC OUTCOME 1 
Sharpen and clean knives as well as the cutting surfaces in accordance with organisational requirements. 

ASSESSMENT CRITERIA
 

ASSESSMENT CRITERION 1 
The reasons for keeping knives sharp and how a blunt knife can impact on safety and performance are explained. 

ASSESSMENT CRITERION 2 
Cutting surfaces are safely secured and checked that they are clean and ready for use. 

ASSESSMENT CRITERION 3 
Knives are cleaned and sharpened in an organised and efficient manner. 

SPECIFIC OUTCOME 2 
Handle knives in an organised and efficient manner in accordance with organisational requirements. 

ASSESSMENT CRITERIA
 

ASSESSMENT CRITERION 1 
Procedures for handling knives are demonstrated, described and the safety aspects thereof explained. 

ASSESSMENT CRITERION 2 
The different knives within a full set of knives are identified and their purpose explained. 

ASSESSMENT CRITERION 3 
The correct knife for the task is selected and the importance of doing so explained. 

ASSESSMENT CRITERION 4 
The correct cutting technique is used to cut food items in an organised and efficient manner. 

ASSESSMENT CRITERION 5 
Unexpected problems associated with handling and maintaining knives are listed and reasons for decisions to solve these are described. 
ASSESSMENT CRITERION RANGE 
The range of unexpected problems is: Injury, blunt knife, broken knife and incorrect knife.
 


UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
1. Anyone assessing a learner against this unit standard must be registered as an assessor with the relevant ETQA.

2. Any institution offering learning that will enable achievement of this unit standard must be registered with the FE/HE Registrar.

3. Any institution wishing to receive skill development grants must be accredited with the relevant ETQA. Such an institution will also be registered with the relevant SETA.

4. Moderation of assessment will be done by the relevant ETQA at its discretion.

Embedded knowledge and Critical cross-field outcomes have been included within the specific outcomes category.

This has been done as it was deemed necessary to ensure holistic assessment occurred.

The specific outcomes can be applied in a range of contexts.

Many of the outcomes have been written in such a way that competence must be demonstrated in the context as opposed to in isolation from a context.

The specific outcomes are comparable to outcomes used internationally.

We therefore structured outcomes using the format noun + verb + condition (modifying phrase)Specific outcomes

  • Learn the safety procedures that are applicable when using knives.

  • A new employee should be able to achieve this unit within 1 month of being trained.
  • Ongoing measurement of the learner's ability to meet this standard is recommended.
