PURPOSE OF THE UNIT STANDARD 
Learners who demonstrate competence as described in the outcomes of this unit standard will be able to implement good manufacturing practices in food processing.

A person credited with this unit standard will be able to:

  • LEARNING ASSUMED TO BE IN PLACE AND RECOGNITION OF PRIOR LEARNING 
    It is assumed that the learner is competent in Communication and Mathematical Literacy at NQF Level 3. 

    UNIT STANDARD RANGE 
    In the context of this unit standard, good manufacturing practices include the aspects that concern a food safety program, in accordance with the Codex Alimentarius.

    Demonstrate an understanding of the relationship between quality management systems and good manufacturing practices.

  • Quality control (QC), good manufacturing practices (G M P), Supplier quality assurance (SQA), hygiene management practices, hazard analysis critical control points (HACCP), quality systems, good laboratory practices, total quality management (TQM).

    The overriding objective of minimising the contamination of foodstuffs and the potential sources of contamination in a food processing facility is described in terms of good manufacturing practices. 

    ASSESSMENT CRITERION 2 
    The necessity of complying with international standards of hygiene and other food safety regulations is explained in accordance with specified requirements. 

    ASSESSMENT CRITERION 3 
    A basic insight is given into the personal hygiene provisions of the national food safety regulations. 

    ASSESSMENT CRITERION 4 
    The reasons for conducting pre-employment medical examinations are detailed using examples of chronic contagious illnesses that preclude suffers from working in a food handling environment.

    The role that cleaning and sanitation programs play in minimising contamination is described in terms of a food processing environment.

    The various Acts that regulate the food processing and production industry are detailed in terms of their relevance to different sectors of the food industry.

    The importance of maintaining an appropriate pest control program in and around a food processing facility is explained including the methods of monitoring the effectiveness of the program.

    The necessity of adhering to the various building requirements is explained as applicable to specific food processing environments.

    The equipment and facilities maintenance schedules are described to ensure that the equipment and facilities of a food processing plant are kept at optimum operating and sanitary levels.

    The methods for monitoring a specific process control are described as applicable to a particular food production facility.

    Demonstrate an understanding of the policies and procedures for the maintenance of a GMP program.

    The operational structure of a total quality management system is described as applicable to own workplace.

    The benefits of a TQM are explained as apposed to individual non-integrated quality systems.

    The procedures for the examination and auditing of the quality management systems are described according to standard operating procedures (SOPs).

    The procedures for the recording of the performances of the quality management systems are described according to standard operating procedures (SOPs).

    Compliance to the cleaning and sanitation program is monitored as an integrated component of good manufacturing practices (GMP) according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 3 
    Compliance to the pest control program is monitored as an integrated component of good manufacturing practices (GMP) according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 4 
    Compliance to the equipment and facilities maintenance program is monitored as an integrated component of good manufacturing practices (GMP) according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 5 
    Compliance to the production and process control program is monitored as an integrated component of good manufacturing practices (GMP) according to standard operating procedures (SOPs).

    ASSESSMENT CRITERION 1 
    Standard reports are compiled and administered according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 2 
    Non-conformance reports are analysed and corrective measures initiated according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 3 
    Internal audits are conducted and reports are compiled as a member of the audit team according to standard internal auditing procedures. 

    ASSESSMENT CRITERION 4 
    Policy and procedure documentation are maintained for the work area according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 5 
    Deviations from normal operating performance are reported according to standard operating procedures (SOPs). 

    ASSESSMENT CRITERION 6 
    Appropriate corrective measures are selected and implemented to address areas of non-conformance according to standard operating procedures (SOPs). 


    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
  • Anyone assessing a learner against this unit standard must be registered as an assessor with the relevant ETQA.
  • Any institution offering learning that will enable achievement of this unit standard must be accredited as a provider through the relevant ETQA.
  • Moderation of assessment will be overseen by the relevant ETQA according to the moderation guidelines in the relevant qualification and the agreed ETQA procedures.

    The assessment of qualifying learners against this standard should meet the requirements of established principles. Practical assessment activities will be used, which are appropriate to the contents in which qualifying learners are working. These activities will include an appropriate combination of self and peer assessment, practical and oral assessments, observations etc.

    The assessment should ensure that all the specific outcomes, critical cross-field outcomes and essential embedded knowledge be assessed. The specific outcomes must be assessed in its own right, through oral and practical evidence. It cannot be assessed by observation only.

    The specific outcomes and essential knowledge must be assessed in relation to each other. If a qualifying learner is able to explain the essential embedded knowledge, but is unable to perform the specific outcomes, then they should not be assessed as competent. Similarly, if a learner is able to perform specific outcomes, but is unable to explain or justify their performance in terms of the essential embedded knowledge, they should not be assessed as competent.

    Evidence of the specified critical cross-field outcomes should be found, both in performance and in the essential embedded knowledge.

    Performance of specific outcomes must actively affirm target groups of qualifying learners, not unfairly discriminate against them. Qualifying learners should be able to justify their performance in terms of these values.

    Embedded knowledge is reflected in the assessment criteria for each specific outcome and must be assessed in its own right, through oral and written evidence. Observation cannot be the only assessment.

    The Learner:

    At this level the communication/reporting of issues arising in the workplace, is embedded in the specific outcomes and the related assessment criteria.

    It is understood that, due to the nature of the work environment and the skills level of the Learner, that the aspects of teamwork form an integral part of the necessary specific outcomes and related assessment criteria.
