PURPOSE AND RATIONALE OF THE QUALIFICATION 
Purpose:
The purpose of the Advanced Diploma in Hospitality Management is to develop graduates in the Hospitality industry who can demonstrate focused knowledge and skills. Learners will develop depth and specialisation of knowledge, together with basic research principles and methodology, to enable graduates to manage and apply their learning in the workplace.

The learner will be competent in managing specialised areas in Accommodation Management and Food and Beverage Operations, by applying a variety of managerial skills including financial, legal and consumer behaviour. This qualification will also prepare the learner for postgraduate study through the deepening of their knowledge and understanding of theories, principles and practices in their fields of specialisation in order to undertake and resolve more complex theoretical and practice-related problems in the hospitality sector. Research methodologies will be practiced in order to lay the basis for research.

Rationale:
The hospitality and tourism industry is one of South Africa's fastest growing employment sectors, and therefore there is a need for more qualified managers in this industry. This qualification will provide a set of very important and essential skills to support national effort to equip prospective managers to increase organisational success and fill the existing gap.

This qualification will specialise in Accommodation Management and Food and Beverage Operations. It will also include important research related modules to ensure a balanced perspective of modern corporate business to inform the environment within which the graduate must operate. The qualification is designed to include projects which will benefit both the immediate community and the country as a whole. 

LEARNING ASSUMED TO BE IN PLACE AND RECOGNITION OF PRIOR LEARNING 
Recognition of Prior Learning (RPL):
As per institutional policy, credits towards this qualification may be obtained by means of RPL. Candidates who do not meet the minimum entrance requirements but who can demonstrate satisfactory levels of competence in the field, may apply for Recognition of Prior Learning and may be granted entry to the qualification on this basis.

Entry Requirements:
The minimum requirements for admission into an Advanced Diploma are:
  • Diploma in Hospitality Management at Level 6.
    Or
  • A similar qualification at Level 6.

    This qualification comprises elective and compulsory modules at Level 7 totalling 120 Credits.

  • EXIT LEVEL OUTCOMES 
    1. Demonstrate knowledge and understanding of the application of different research methodologies, data collection methods, procedures and analysis principles within the two major research paradigms.
    2. Apply strategic management principles applicable to the hospitality industry, including the consideration of social responsibility, ethical and legal issues in corporate decision making processes as well as managing diversity in the workplace.
    3. Demonstrate the ability to apply a range of options and make decisions concerning food and beverage operations procedures within an existing food service facility demonstrating a consciousness of service excellence.
    4. Use a range of inter-connected techniques, methods, strategies and service excellence theories and practices to manage and improve specific types of accommodation establishments.

    Associated Assessment Criteria for Exit-Level Outcomes 3:
  • Analyse a range of food and beverage operational systems.
  • Identify appropriate service systems for the relevant food service facility.
  • Upgrade the food service facility in terms of identified systems.

    Associated Assessment Criteria for Exit-Level Outcomes 4:
  • Observe and apply quality standards for grading purposes.
  • Apply risk management principles.
  • Implement marketing and promotion principles and techniques.
  • Plan and manage convention and events.
  • Investigate and evaluate international trends.

    Integrated Assessment:
    Formative assessment strategies are continuous and aimed at giving learners feedback on their progress in the achievement of learning outcomes as well as to integrate theoretical and practical competence. Such strategies include informal assignments, discussions, case studies, informal tests and tutoring.

    Some of the criteria may be assessed through observation of the learners during classes. Summative assessment strategies are aimed at judgement of the learning in relation to the Exit Level Outcomes of the qualification. Such strategies include examinations, reports, projects or equivalent such as a portfolio of evidence which is representative of a selection of the outcomes.

    The outcomes of the formal assignments and tests will contribute to a cumulative class mark as per pre-arrangement with the learners. In the formal assignments and tests, and in the respective examinations learners will have to demonstrate the ability to communicate and integrate knowledge of the key issues, highlighted in the respective modules, and identify and resolve typical problems in the subfields as indicated. This will require critical and creative thinking as well as the ability to make practical applications of the learning outcomes as indicated in the module descriptors. 

  • INTERNATIONAL COMPARABILITY 
    There is currently no international qualification named Advanced Diploma in Hospitality Management. However this qualification will be offered comparative to industry standards and equivalent qualifications both domestically and internationally. In order to ensure international comparability the qualification will make use of an advisory committee which will consist of industry and academic specialists which are familiar with international trends and developments. In addition the qualification will make use of, where possible, international resources such as textbooks, published articles and other resources for instruction purposes.

    However, when comparing these course with international qualifications at degree level especially those of Central Florida University the university we have partnered with. This advanced diploma is comparative to their degree programme in Hospitality.
