This unit standard is intended for people who manage the flow of cold chain foods through the various areas of a wholesale or retail unit.

Persons credited with this unit standard are able to:
  • Manage cold chain processes in the various areas of the unit.
  • Manage the documentation and disposal of spoiled/expired foods.
  • Manage the optimal performance of refrigeration systems.

    ASSESSMENT CRITERION 1 
    Critical control points for the cold chain are identified as they apply to the unit. 

    ASSESSMENT CRITERION 2 
    Applicable documentation to be completed as part of the management process of the cold chain in all areas of the unit is drawn up as applicable to the management of critical control points. 

    ASSESSMENT CRITERION 3 
    Areas of non-compliance to cold chain processes are identified and corrective action are recommended according to organisational procedures. 

    SPECIFIC OUTCOME 2 
    Manage the process of clearing spoiled/expired foods.

    ASSESSMENT CRITERION 1 
    The various methods and processes for clearing the different kinds of spoiled/expired foods are explained as they apply to the unit. 

    ASSESSMENT CRITERION 2 
    The documentation required in the clearing of spoiled/expired foods are explained as required by legislation and the organisation. 

    ASSESSMENT CRITERION 3 
    The method to manage documentation and the process of clearing of spoiled/expired foods in a unit are explained in terms of legislation and the organisation's requirements. 

    SPECIFIC OUTCOME 3 
    Manage the optimal performance of refrigeration systems. 

    ASSESSMENT CRITERIA
     

    ASSESSMENT CRITERION 1 
    Refrigeration systems monitoring processes and procedures to ensure optimal operation are explained according to the requirements of the manufacturer and the organisiation. 

    ASSESSMENT CRITERION 2 
    Applicable documentation to be used in maintaining refrigeration systems optimal performance is drawn up according to operational requirements. 

    ASSESSMENT CRITERION 3 
    Contingency plans in the event of a breakdown in refrigeration systems are concluded as they apply to the organisation. 

    ASSESSMENT CRITERION 4 
    The process for monitoring the performance of refrigeration systems is managed according to manufacturer and organisation requirements. 


    UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
  • Anyone assessing an individual against this unit standard must meet the assessor requirements of the relevant ETQA. In particular, such assessors must demonstrate that they assess in terms of the scope and context defined in all the range statements.
  • Any institution offering learning towards this unit standard must be accredited as a provider with the relevant ETQA.
  • External moderation of assessment will be conducted by the relevant ETQA at its discretion according to the moderation guidelines in the relevant qualification and the agreed ETQA procedures.
