PURPOSE OF THE UNIT STANDARD 
This unit standard is for anyone who has to manufacture a dry food product from an evaporated mixture by means of a roller dryer. A person credited with this unit standard is able to:
  • Demonstrate an understanding of the manufacturing of a dry food product by means of a roller dryer.
  • Prepare to manufacture a dry food product by means of a roller dryer.
  • Dry an evaporated mixture by means of a roller dryer.
  • Perform end of drying procedures.

    Terminology: Clarification/ explanation/ definition:
  • Spray-fed roller drying system: Refers to a roller drying system where nozzles above the drums spray a thin film of pre-treated mixture on the hot surfaces of the drums.
  • Standard operating procedures: Refer to company procedures, prescribed procedures from the manufacturer, personal safety and food safety practices and procedures, good manufacturing practices, best practices, applicable legislation, time frames, recipes and specifications.
  • Trough-fed roller drying system: Refers to a roller drying system where pre-treated mixture is admitted to a trough, formed by the cast iron drums and their end walls. In this way a thin layer of the mixture on the drums is heated quickly when it comes in contact with the hot surface.
